Cooking bagged Stuffing in an instant pot

Can anyone please tell me why all these recipes for instant pot stuffing say to put it in a dish or baking pan instead of just dumping the liquid and the bag of stuffing in the pot (I don’t like veggies) and starting it up. I’d like to have it for a side dish plus
