I promised the four-year old we could make ice cream sandwiches today. I have a normal go-to chocolate chip cookie recipe but I'm looking for one that would go well with the ice cream - a little chewier, softer, larger. Suggestions
If your go to chocolate chip cookie recipe works, why not just remove the cookies from the oven a little sooner to maintain that soft chewy texture you're looking for. As for larger, well there's no end to the size except the recipe
I like chocolate chip cookies or sugar cookies. Either way I like to bake them 90% of the way through so that do not become too brittle for sandwiching.
