EAT IT AND WEEP FUDGE

This fudge is the richest creamiest chocolate fudge that I have ever tasted...I think that the final addition of marshmallows is the secret. It is perfect for watching your favorite tearjerker and comforting yourself with these little "bon bons"...one hand in the candy box and the other dabbing away your tears ( My little town had an old fashioned soda shop called Elliot's. They made all their own candy and this recipe for fudge was handed down to my mother by their candymaker.)

Serves 5 pounds

  • 4 1/2 cups sugar
  • 1 cup evaporated milk
  • 2/3 cup water
  • 1/2 cup butter
  • 2 packages( 12 oz packages)semi sweet pieces or chips
  • 2 teaspoons vanilla
  • 10 ounces marshmallows
  • 2 cups walnuts
  1. In a large heavy pot add the sugar, milk, water and butter and stir. Boil until the mix makes a solft ball when dropped in a glass of water

  2. Remove from the heat and add the vanilla.

  3. Beat into the mixture the chocolate bits and the marshmallows untill they have disolved completely.

  4. Add 2 cups of coursely chopped walnuts.

  5. My mother spread the mixture onto a large white enamelled tray with little sides until the fudge cooled. A cool slab of marble or a baking sheet would also work.

  6. After the fudge is cool , cut into whatever size you want.
