Smoked Salmon Quiche with Goat Cheese and Leeks

Serves 8-10

  1. Preheat oven to 375 F.

  2. In a mixing bowl fitted with a paddle attachment, combine all ingredients for pie crust and mix on medium-low speed until it forms a dough.

  3. Form dough into a ball and wrap in plastic wrap and refrigerate for at least 30 minutes.

  4. Remove dough from fridge and roll out into a 9 inch quiche pan.

  5. Prick bottom dough all over with a fork

  6. Bake pie crust for 10 minutes.

  1. Scatter the salmon, leeks and goat cheese over the bottom of the partially baked crust.

  2. In a mixing bowl, beat the eggs, yolks, and half and half. Add salt, pepper and combine.

  3. Pour the egg mixture over the salmon, leek and cheese mixture in the pie shell.

  4. Bake until the top is golden, and set in the middle, about 40 minutes.

It really is! It's my go to for any brunch. The only problem is, there are never any left overs!

Love the sound of the crust. I'm one of the weirdos who hates smoked salmon, but I bet smoked turkey would make a good sub.

Having eaten bethmichelle's quiche I can honestly say it is the single best quiche I have ever had. It's all about the cream cheese crust. Just brilliant.
