Makes a bunch

  1. Peel carrots (or scrub them good) and put them through the food processor to grate them.

  2. In a non stick pan, pour some vegetable oil and add the chopped onion and sauté until translucent, but not browned. In the same pan, add the grated carrot and continue to cook until softened (about 5 minutes.) Remove and allow to cool.

  3. In a mixing bowl, combine the eggs and flour and mix thoroughly. Add the cooled carrot and onion mixture, salt, pepper, cilantro, lemon juice, zest and goat cheese and mix well.

  4. Form into small patties and fry until nice and brown on both sides.

I was just mulling over what I would do to go about making carrot fritter - to grate? to mash? to fry? to deep fry? which herbs? Now I don't even have to go to the trouble of experimenting myself because these look fabulous! Definitely giving them a try.
