In a small bowl, combine the cocoa, flour, sugar, espresso powder and salt. Mix together well.
Ask the hotline about this step!In a small saucepan, heat the cream over medium-low heat, until it just starts to steam.
Ask the hotline about this step!Using a wooden spoon, add the cocoa mixture to the cream, and stir until blended. Continue stirring over medium-low heat until sugars dissolve, about 3 minutes.
Ask the hotline about this step!Gradually add the milk to the saucepan and stir to combine.
Ask the hotline about this step!Increase heat to medium. Stir continuously for about 10 minutes, until mixture thickens. You can feel with the spoon if the mixture starts sticking to the bottom. If so, reduce heat. Keep stirring. You're shooting for the consistency of a very loose pudding.
Ask the hotline about this step!Remove from heat and stir in vanilla. You might see some lumps, but that's okay - they're yummy little nuggets of fudginess.
Ask the hotline about this step!Serve immediately. Hot chocolate will thicken more as it cools. Ladle into mugs, or little demitasse cups for when you've got company. Plop a fat marshmallow on top, or a little whipped cream, if desired.
Ask the hotline about this step!Serve with hot buttered toast for breakfast dunking. Or Chewy Sugar Cookies #2 (or any cookies!) for dessert dunking. http://www.food52.com/recipes/3881_chewy_sugar_cookies_2
Ask the hotline about this step! That title is killing me, also the serving size. This reminds me of visiting my aunt when I was little - I was allowed to put as much syrup as I wanted in my chocolate milk and I would make it to approximately this texture. Somehow I think I'll like this version better!
ha! My daughter does that with the Hershey's syrup! Let me know if you try this one!
Bright idea, MrsL! I think I might try this with coconut milk, though will need to restock coconut milk first.
Oh. my. dear. sweet. lord. If you try this with coconut milk please leave a comment about how it goes because in my imagination right now it is practically on par with visions of heaven!
LOL. I guess I'll have to make a trip to the market for that coconut milk. You should check out my fondue recipe if you're into coconut milk ;)
Okay, I did it and Holy Cow!!! 1 can coconut milk, 2 T dutched cocoa, 1.5 t cornstarch, 2 T sugar, pinch salt, slightly heaping 1/2 t espresso powder, splash vanilla extract. It's like warm liquid pudding - ultra rich & chocolatey, not overly sweet, and with coconut undertones. It definitely 2 servings worth, even for me!
Yum!! I am so trying that when I feel better. I love it when recipes provide inspiration for others!
Reminds me of the hot chocolate served in Spain with churros.... My favorite snack back in my student days after dancing all night. Nothing like chocolate and fat at 7am....
I meant to add that this sounds delicious...if you add a couple of egg yolks, it would be pudding?
Thanks!! Yeah, I guess with a couple egg yolks, it would be pudding then! I may have to experiment with that sometime!
Oh! I just read this! Perfect for the Buttermilk Cookies that I dreamed about !
I broke down and made this today (with Penzey's dutched cocoa & corn starch). Love the mouthfeel; it is much more decadent than normal hot chocolate. Thanks, mrslarkin, from my waistline!
My waistline says you're welcome! Hey dairy is good for you, right? And cocoa's got TONS of antioxidants. ;)
My chocolate addicted husband will love this...actually maybe even poured over ice cream...yum. I dream recipes also!
This reminds me of the hot chocolate I enjoyed in Italy, the kind that sticks to your teeth.
Never tried it when I was there Liz. I was too busy drinking cappuccinos, and stuff. ;)
Hi, want to make this NOW but only have cornstarch. Would that work??
Hope I'm not too late! You can definitely use cornstarch! I just mixed up a batch using 2 tablespoons cornstarch. Came out really nice. Let me know how it turns out for you!
I just read your tags on this recipe and you are cracking me UP!
heehee! arielleclementine has funny tags too! she my inspiration!
Wow! You must have the luckiest kids in the neighborhood. I've only got Dutched cocoa right now, which is probably a good thing or I'd make and drink a whole batch.
Not to put the peer pressure on you hla, but I think i am going to try this again with the Dutched. Initially I thought it would be too strong, but I just stuck a finger in my Droste cocoa and it's so so good!
FYI, made it with Dutched this morning. Pretty darn good! I do prefer regular cocoa, but I am not complaining as I'm happily sipping thick hot chocolate on this cold winter morning.
If you had been complaining about Dutched-ness even while sitting there and sipping a thick hot chocolate, I think we would have needed to stage an intervention of some sort, hehe. :)
Holy Guacamole, warm almost pudding in a cup. Swoon! I dream recipes and food too!!!
I know, right? Glad to know I'm not the only one who dreams about food (among other things). Thx, aargersi!
I totally dream recipes too! And I definitely dream about hot chocolate. Yum!!!...

I always tell my kids chocolate is good for them. It has a lot of iron. This looks very healthy.
o.k. I win the Bad Mommy Award.
