Zest 1/2 meyer lemon (reserve half) Ask a question about this ingredient
Juice 1/2 meyer lemon Ask a question about this ingredient
1 teaspoon tarragon (dried or fresh chopped) Ask a question about this ingredient
1/4 cup pitted kalamata olives (roughly chopped) Ask a question about this ingredient
2 tablespoons capers Ask a question about this ingredient
Season flour with salt and pepper, and dredge chicken thighs for a light coating.
Ask a question about this stepCoat saute pan with olive oil and heat coated pan on medium high heat. Add chicken and brown thighs on both sides (about 5 minutes). Remove from pan.

Ask a question about this stepAdd lemon juice, half the zest, tarragon, and olives and reduce by about half.

Just came across this and cooked it tonight. Nice to have something different and a little special for a weekday chicken dinner - fast and nice flavour combination. Didn't have Meyer lemons so just used regular and it was very tasty.
