Over the Top Hummus

    The Fiery Epicurean's Notes:

    Inspired by an overflowing vegetable garden. Great with ground lamb burgers, greek salad, pita chips, naan, and roasted and/or raw vegetables.

Makes Approximately Three Cups

4 to 6 Garlic Cloves (depending on how much you love garlic) Ask a question about this ingredient

2 cups Canned Organic Chickpeas, drained, & rinsed Ask a question about this ingredient

1 1/2 teaspoon Kosher Salt Ask a question about this ingredient

1 teaspoon Ground Black Pepper Ask a question about this ingredient

1/3 cup Organic Tahini (sesame paste) Ask a question about this ingredient

6 to 8 tablespoons Freshly Squeezed Lemon Juice Ask a question about this ingredient

2 tablespoons Extra Virgin Olive Oil Ask a question about this ingredient

1 tablespoon Ground Cummin Ask a question about this ingredient

A few splashes of Mexican Hot Sauce (Valentina Salsa Picante)* Ask a question about this ingredient

1 teaspoon Extra Virgin Olive Oil (optional) Ask a question about this ingredient

dashes Paprika (optional) Ask a question about this ingredient

  1. Rinse the chickpeas in cold water to remove all the water-funk that comes in the can.

  2. Juice approximately two lemons, making sure to remove any seeds that may have fallen into liquid.

  3. Add all the ingredients to a food processor fitted with the steel blade and process until smooth. You may have to stir once to make sure the garlic and chickpeas did not get stuck under the blade.

  4. Place into a serving dish and add extra virgin olive oil to the top of hummus and dash with paprika. Enjoy.

  5. *Tabasco, which I would classify as an American hot sauce, truly does not have the same flavor profile as Mexican hot sauce. Most supermarkets have an ethnic section where this sauce can be found.
