Guacamole with Corn Chips

We created this recipe to go along with the Thanksgiving meal served at the Avilas in the movie "What's Cooking?" This recipe is from our newly published book "Cooking with the Movies: Meals on Reels." —Anthony Chiffolo

What You'll Need
Ingredients
  • 4 ripe avocados
  • 1 Spanish onion, finely chopped
  • 1 plum tomato, finely chopped
  • 1/2 cup cilantro, finely chopped
  • 2 tablespoons mayonnaise
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon salt
  • juice of 1 lime
  • red radish slices
  • corn chips
Directions
  1. Peel the skin off the avocados and discard; remove the pit. In a mortar, mash the soft green fruit with a pestle, and add it to a bowl prepared with the onion, tomato, cilantro, mayonnaise, pepper, and salt. Mix well. Squeeze the lime juice over the guacamole. Garnish with a few red radish slices. Serve with a side of corn chips.

Anthony, you have broken a cardinal rule for making guacamole: NEVER use mayonnaise in guac. Sour cream is (grudgingly) O.K., but not desirable. Mayo has an overpowering flavor and completely changes the taste of guac. Avocados are already very creamy and smooth, and don't need a filler like mayo. In my opinion, Mexican food is one of the most distinctive and delicious foods in the world. I was born on Juneteenth, 1935 in South Texas, where I lived until I was 9, when my family moved to California during WWII. I have spent over 75 of my almost 89 years in Southern California, and ate the good Southern cooking of my gringo family until I was 15 years old. Once introduced to Mexican food in San Diego, I was addicted for life. Today, Mexican and Central American food is known and enjoyed all over the world. The original, unprocessed whole grain (corn) tortilla, beans, tomato, squash, coriander and pepper diet is one of the healthiest known. Tacos reign supreme everywhere. Guacamole, enjoyed by millions, is the undisputed queen of this region. Respectfully, It is never made with Mayonnaise.
