Makes 1 sandwich

  1. Lightly toast your bread and spread the mayo on one slice.

  2. Scatter the scallions over the mayo, then lay as many of the sardines as you like over one slice of bread. Press the sardines with a fork to break them up a bit and cover the bread.

  3. Layer the chopped greens over the sardines--use up as much of the greens as you prefer.

  4. Over the greens, squeeze lime or lemon juice--a good amount is wise, to counter the richness of the mayo and sardines. Salt and pepper generously and top with second slice of bread.

Oh, this sounds so good. I have to find the right bread. Perhaps those rolls used for Bánh mì? Great recipe. Thanks.
