Pizzelle - Chocolate-Espresso

Pizzelle is a "must" during the holiday season; I grew up with an Anise flavored Pizzelle; I always crave chocolate and so here is my recipe, inspired by my grandmother’s Anise cookies.

These crisp, chocolaty snowflake wafers are excellent as is, but for a variety I like to roll some cookies, hot off the Pizzelle iron, and stuff with a cream filling once they have cooled.

BTW - a Chocolate Vodka Martini makes an excellent accompaniment!

What You'll Need
Ingredients
  • Tool needed: Villa Ware Pizzelle Baker
  • 1-1/2 cups sugar
  • 1 teaspoon Espresso Powder (Medaglia D' Oro)
  • 3 large eggs
  • 1/2 cup salted butter melted and cooled
  • 1 teaspoon Vanilla
  • 1 tablespoon Creme de Cacao
  • 2 1/2 teaspoons baking powder
  • 1/4 cup Cocoa Powder
  • 2 cups of flour (all purpose)
Directions
  1. Preheat the pizzelle baker.
  2. In a large mixing bowl, add and whisk to incorporate the sugar and Espresso powder.
  3. Mix in the eggs, one at a time.
  4. Add and mix the cooled butter, vanilla and crème de cacao.
  5. Sift the baking powder, cocoa and flour together.
  6. Add the flour mixture to the sugar/egg mixture 1 cup at a time; mix to make a light enough dough to drop onto the pizzelle baker.
  7. Drop a heaping teaspoonful of batter in center of each grid pattern to make full size pizzelles.
  8. Hold handles together firmly during baking, note: some bakers have a clip to hold the handles firmly together. Trim off any overflow if needed.
  9. Baking time is 30 to 45 seconds, will vary slightly because of consistency of the batter or the amount of dough used. Let cool completely on a rack, then store in an airtight container.

Absolutely one of the worst recipes I have tried for pizzelles. I’m sure they taste delicious but I wouldn’t know as they stuck to my pizzelle maker and had to be scraped off. What a waste of time and ingredients. I do not recommend at all

For the cocoa powder, do I use sweetened or unsweetened? Most recipes call for unsweetened but I can’t find it in my stores.

Hi Lauren, I use Hershey's Cocoa 100% Natural unsweetened. Hope you can find it...

I gave these a try today. They turned out great when cooled, though I had a lot of problem with sticking. I have a couple different irons, so I tried the Palmer and the Villa Ware and had the same sticking issues. It's raining today and I always find that affects the cookies. I'll try again on a drier day and report back.

Hi, Hilaraybee, I am thrilled you tried these! I have never had a sticky problem, you are so good at making them I am sure you can tweak whatever you need, easily. Congrat on you CP :)

Thank you! I'm pretty sure it was the weather. I don't bother making pizzelle in the summer here because of the humidity. I can sometimes get them to work by adding more flour. But it is freezing now, so perfect pizzelle weather.

@Hilarybee - YUM, stuffed with gelato! I have rolled and piped a stiff whipped cream. I have thought about ice cream sandwiches, and thought they would probably crack easily, but, then you never know if you don't try!

My family makes these every christmas, too. I got four!! pizzelle irons when I got married to ensure I would carry on the tradition. My husband loves the chocolate- but I usually prefer either almond or orange.

I love them all, Hilarybee! Growing up we always had vanilla with aniseed, I had my grandmother's old iron (and we are talking OLD), it finally "died", but I still keep it around.
