Expandyour favorite pizza crust (enough for 2 thin crust pizzas) Ask a question about this ingredient
1 head cauliflower- cut into florets Ask a question about this ingredient

truffle salt (or course sea salt) Ask a question about this ingredient

1 garlic clove- cut in half, skin still on Ask a question about this ingredient
2 small patty pan squash- thinly sliced in discs Ask a question about this ingredient
fresh thyme Ask a question about this ingredient
1 cup grated cheese (an Italian blend like parm and mozzarella is good) Ask a question about this ingredient
Preaheat oven to 400 degrees. Toss cauliflower with enough olive oil to coat, and sprinkle with truffle salt. Put in a single layer in a baking dish, and baked for about 20-25 minutes. Set aside.
Ask a question about this stepBump oven temp up to 450. Roll out pizza dough to form a thin crust, brush with truffle oil.
Ask a question about this stepLayer on cauliflower, thin slices of squash, and a thin layer of cheese. Sprinkle lightly with thyme.
Ask a question about this stepBake until crust is light brown and cheese is bubbly (about 15 minutes, but varies based on your dough recipe). Right when you remove from oven, brush edges of crust with cut garlic.

this sounds great! My daughter and I are just starting out with pizza making and this is right up our alley. Curious, though, and I remember seeing this on foodpickle and can't remember the answer - does this cauliflower remain this green after cooking? So pretty.
Yeah, I'm pretty sure this one did stay green after cooking... I actually used this cauliflower in a different recipe, and use a regular ol' white one for the pizza. Pizza making is SO FUN! I'm seriously making pizza on a weekly basis....
YUM, this sounds delicious! I got a Romanesco in my CSA box earlier this year and sadly, not since - I was in awe of it when I opened my box.

I actually used a regular head of cauliflower for this, not the one in the pic... but I just got that crazy one in my CSA, so figured this was the perfect opportunity to post a picture of it!
