Serves 10

  1. Melt butter.

  4. Stir in cheese until melted.

  1. In large skillet, cook Canadian bacon and onion in the 3 T butter until onion is tender but not brown.

  2. Add eggs to skillet and scramble just until set.

  3. Fold mushrooms and cooked eggs into Cheese Sauce.

  4. Turn into a 12X7X2-inch baking dish.

  5. Combine remaining melted butter, crumbs, and paprika; sprinkle atop eggs.

  6. Cool, cover and chill until 30 minutes before serving.

  7. Bake uncovered, in 350 degree oven for 30 minutes.
