Makes 4 generous cups

  1. Place the liquids into a large non-reactive dish.

  2. Whisk in the salt, chili pepper and toasted (cooled) curry powder.

  3. Add the diced apples. The apples can be as big or small as you desire.

  4. Cover and refrigerate over night.

  5. Remove the apples from the marinade and place in a serving dish. You can freeze the used marinade and use it one more time.

These look delicious!

I have enjoyed these at a dinner party at the author's house. They have a lovely light but deep flavor. Perfect with a full fatted cheese, like brie or a saltier cheese, like Manchego.
