Rosemary Honey Lemonade

Lovely and very refreshing indeed.

Serves 10 cups
  • 2 cups freshly squeezed lemon juice
  • 8 cups spring water or soda water
  • 1 cup rosemary honey
  • 1 cup sugar
  1. Simply mix all the ingredients together and stir until all the honey has dissolved. Add slices of lemon and sprigs of rosemary for an elegant finishing touch. Serve chilled or with ice.

So is it honey made from rosemary plant pollen, or is it rosemary infused honey? Does it taste like rosemary?

It is rosemary plant pollen and yes, you can feel gentle touch of rosemary. On account of its intense floral flavors and pristine whiteness, the Romans deemed rosemary honey as the best in the world. Indeed, the rosemary of this honey, primarily harvested in the Luberon region of France, starts blooming only when the autumn rains are plentiful for its development.

Sounds lovely. One question, though, can you make your own rosemary infused honey, or do I have to find a hive near a flowering rosemary plant?
