Makes many mini meatballs

  1. Mix all ingredients except for the olive oil together until combined. Don't over-mix or they will be tough. Form into mini meatballs. I use the small ice cream scoop with the release handle. It is approximately 2 tablespoons.

  2. Heat olive oil over medium heat in a large skillet (I use a non-stick one) and brown meatballs on all sides for 8-10 minutes. I drain my meatballs a bit on paper towels before serving.

  3. Enjoy in any application you choose from baked pasta to toothpicks.
