This is super easy. In a medium pot, heat water on high. Add sugar and stir to dissolve. Add whole plums, vanilla, and star anise. Bring up to a boil and lower to a simmer. Simmer, partially covered for 15 minutes. Uncover, and simmer for another 5 min. Throughout the simmering process, you want to mash the plums with a spoon – they come apart really easily.
Ask a question about this stepStrain through a cheesecloth-lined mesh strainer. Pick up the ends of the cheesecloth and twist to squeeze all of the juice out of the plums. You may need to let it cool a bit before doing this. Discard the solids.

Ask a question about this stepHey! I used fresh sugar plums (http://www.mountlassen.com/products/fruits/fruits-dtl-sgrplms.html), but you could easily use regular sweet plums or shiro plums which are in season (and i love!). Let me know how it comes out!

Looking forward to testing your recipe over the weekend. Not certain what you mean by "sugar plums" so I will look for ripe and sweet plums, hoping that will do. Sounds lovely!
