Serves 4 sandwiches

  1. Cook bacon in a large cast iron pan until crispy. Set bacon aside on paper towels.

  2. Keep cast iron pan and bacon drippings hot on the stove top.

  3. Slice green tomatoes into 1/4 inch slabs.

  4. First, dip tomato slabs in shallow bowl of flour to lightly coat.

  5. Next, dip tomatoes into a shallow bowl with lightly beaten egg.

  6. Finally, coat the tomatoes in cornmeal.

  7. Fry tomatoes in hot bacon drippings. Cook for about 3 minutes on a side. Sprinkle each slice of tomato with salt and freshly ground pepper

  8. Assemble sandwich: slice roll in half; slather each slice with homemade mayo; add crispy bacon, slices of avocado, fried tomato, and butter lettuce.

The first time I had one of those was at the Hominy Grill in Charlston. I have been making them ever since once the first green tomatoes show up in the garden. Love em'.
