Serves half a gallon of soup

  1. Using a food processor, chop first the tomatoes, then the peppers, next the cucumber and finally the onion. Combine all the chopped vegetables in a large, non-reactive bowl.

  2. Next, chop the garlic and fresh dill in the processor. Add to vegetables.

  3. Pour in the vegetable stir and stir to combine.

  4. Add the olive oil, vinegar, lemon juice and mix in well. Taste and adjust seasoning.

  5. Chill several hours before serving.

After years of searching for the perfect gazpacho, this is now my go-to gazpacho recipe. I made it three times last summer - the last time, I only had fennel in the garden and substituted it for the dill and it was to die for!

Liz, love the ingredients - the apple cider vinegar gives it a fresh twist. I can hardly wait for my many tomato plants to start producing! Gazpacho on the patio time!!

I love gazpacho! It's such a refreshing soup to have on a hot summer day. I've never made it with the apple cider - it looks like such an interesting addition, I'll have to try your recipe! really! soon! And I know how frustrating it can be to try to do something on the computer that doesn't work right away....:-) But love the recipe anyway!!

When I click this, as always, and go to recipe, I click on "edit" at the end of the ingredient I need to re-type and lines immediately double on top of one another. I have edited for months with success until today. There are 2 typos driving me crazy...
