Serves 2

  1. Chop the tomatoes into small chunks.

  2. Heat a little oil in a soup pan, add tomatoes and cook for a couple minutes.

  3. Add the chicken broth to the pan and cook until it starts to boil. Let it simmer for a couple minutes.

  4. Beat the eggs in a bowl. Slowly drop the beaten egg into the soup and stir gently until egg is set. Add salt and scallions, and serve.
