Serves 4

  1. Heat grill or ridged grill pan to medium-high. Have all your burger ingredients ready for assembly on your counter or table, except for beef.

  2. Form ground beef into 4 patties. Don't pack the meat, or handle it too much. Use a light hand for the best juicy burger results. Season with salt and pepper. Grill for 4 to 5 minutes per side, or to your taste. Remove to a clean platter.

  3. While burgers are grilling, lightly toast your buns on the grill. Remove to a clean platter.

  4. Now build your burger!

  5. Spread both cut sides of buns with horseradish mayo.

  6. On bottom bun, place a small handful of arugula.

  7. Followed by a hot burger.

  8. Then a hunk o' cold cheese.

  9. Some sliced onions.

  10. And another dollop of horseradish mayo, if you like.

I'm hoping the snow stays away so I can grill one for lunch tomorrow! We do bleu cheese burgers all the time, but I hadn't thought about adding the horseradish!
