Serves 2

3 or 4 whole, sun ripened tomatoes Ask a question about this ingredient

1 large handful of fresh basil...your favorite Ask a question about this ingredient

1/2 cup olive oil Ask a question about this ingredient

sprinkle of sea salt Ask a question about this ingredient

  1. Squish the tomatoes with your bare hands to make a rough sauce base.

  2. Hand tear the basil leaves and add to the tomatoes.

  3. Add the olive oil.

  4. Toss in a pinch of sea salt.

  5. Mix everything together with your hands. Cover with plastic wrap and put in the sun for at least 3 hours.

  6. Serve over pasta, or grilled bread. Sometimes I just eat it out of the bowl.
