Serves 4

  1. Heat grill or ridged grill pan to medium-high. Lightly toast your buns. Have all your burger ingredients ready for assembly on your counter or table, except for beef.

  2. Form ground beef into 4 patties. Don't pack the meat, or handle it too much. Use a light hand for the best juicy burger results. Season with salt and pepper. Grill for 4 to 5 minutes per side, or to your taste.

  3. Place one lettuce leaf on bottom bun, trimmed to fit.

  4. Place burger on next.

  5. Top with two slices of burrata.

  6. Next, a schmear or drizzle of basil emulsion/pesto…

  7. Followed by a slice of tomato…

  8. And a basil leaf or two or three.

  9. Maybe a little more basil emulsion/pesto on inside of top bun, if you like. Close it up. Grab a bunch of napkins - it might get messy. Buon appetito!

haha! i'm gonna check out antonelli's cheese shop. i noticed CM has occasionally stocked a mass-produced variety, but i'd rather find one that's a bit more authentic

If you have a Trader Joe's near you, their burrata isn't too bad.

Thanks, arielleclementine! I will have to check out TJ's too! Has anyone ever made homemade mozzarella? (just a hop/skip to homemade burrata) :-)

Thanks, Midge! I had the same problem - ask your cheesemonger (is that what they're called?) what day they get their delivery, and go then.
