In a bowl, combine the cucumber, mango, onion, garlic, jalapeno, mint, and lime zest. Toss lightly.

Made this for BigBear, home from college, who loves spicy food. Added a large pinch of just-toasted whole cumin seeds and a large pinch of unsweetened grated coconut. It didn't last long . . . will be making another batch today!! BigBear put this stuff on everything. He particularly liked it on his runny-yolk fried eggs over homemade toasted bread . . . his favorite mid-morning meal. (Teenage boys eat at least six meals a day, for those of you who haven't ever had to feed one.) ;o)

Made another big batch last night, as the first quart disappeared in about 36 hours. This time, I had only one lime, so I used some of my strawberry white wine vinegar instead. Added the same two extras . . . . a large pinch each of coconut and freshly toasted whole cumin seeds. Forgot to add any sweetener, but it seems to be fine as is. I have a feeling we'll be making more this summer! Great, great recipe. ;o)
This looks wonderfully refreshing. I make mango / jalapeno / lime juice based salsas a lot but I can't wait to try yours! I had never thought to add cucumber - but the texture would totally work! and sriracha mayo?? Fabulous! Thanks for posting.

The cucumber and mango are fantastic together, I think this would be great on a pork sandwich. Making pork shoulder roast and rather than do slaw this would be lovely I think.
