Bacon Wrapped Ramps

    This is a great mix of flavors and textures. A perfect appetizer. Sweet, salty, curnchy and creamy. Makes 8 wraps, two per person.

Serves 4

  1. Split each prune ih half and open up.

  2. Place one ramp bulb on top ot he open prune.

  3. Place 1/2 Tablespoon of blue cheese on top

  4. Wrap securely with 1/2 strip of bacon and fasten with a toothpick.

  5. Place on greasted baking sheet. Bake at 375 for about 10 minutes.

  6. TUrn over the wraps to brown the other side.

  7. When bacon is dark and crispy on both sides, remove and drain on paper towels.

  8. Serve hot.

I made these for our appy on Sunday, and we LOVED them. I made 12 for 4 persons, and there were ZERO left. ;) They were super-easy to assemble. I found myself without toothpicks, so I wrapped each one so the seam of the bacon would be on the bottom, and I didn't turn them over.

As I said I would, I used the whole ramp. Folded the greens down and put the blue cheese (I used Point Reyes, my fave US blue) on the leaf right where the bacon wrapped around.

This recipe will definitely be rolled out again next year when ramps are in season. Too bad figs aren't in season at the same time. They would be good in this, too.

I took some pictures, but don't see where I could post any.

Good idea. I had used them in a creamy baked dish. Nothing goes to wase!

Prunes are always dried. If they were fresh, they'd be plums! This sounds delicious.

YOu can substitute a dried fig, date or apricot for the prune. They all work very well!

These were yummy! Made them tonight. Some I made without the prunes (for hubby). Next time, I will spiral the bacon, as I wasn't thinking and rolled them up straight. Not a bad thing, just kinda thick. I used Gorgonzola.

I f you wonder what the orange is inside the bacon wrap, I also tried adding s trip of roasted yam to the bundle along with the ramp. Also tasty!
