Serves 10

  1. Preheat oven to 350 F.

  2. Beat the sugar and the eggs in a food processor until well combined. Add the apricot preserves and beat to blend.

  3. Sift the flour , baking soda and salt into a separate bowl. Melt the butter in a small heavy-based saucepan and add the vinegar and milk.

  4. Fold the dry ingredients and the milk mixture alternately into the egg mixture and pour into a buttered glass or ceramic baking dish. Bake for 45 - 50 minutes.

  1. Combine all the sauce ingredients in a small heavy - based saucepan and bring to a slow boil.

  2. Pour the sauce over the pudding as soon as it comes out of the oven. Pierce the pudding a few times with a skewer to allow the sauce to soak in .

  3. Serve with a homemade vanilla custard.

The was a wonderful recipe and wanted to share the photo of how we served the pudding at a recent lunch with friends - I hope this is okay (I wasn't able to put it behind the lovely picture of your mother, but you are able to reorder them to have her photo as the first view). Thanks again, everyone really loved it.
