I was drinking mojitos before they were cool. Well, they were cold, but before they were popular. I love the classic one, but this watermelon number is my very favorite cooler for hot days. Pink glasses and pink flamingo swizzle sticks are optional, but certainly add to the experience. - Kayb —Kayb

An ideal cocktail for steamy summer days -- fruity, bubbly and not too sweet. The watermelon is light, refreshing and gives the drink a tantalizing rosy hue. Each component plays a vital role, so resist the temptation to skip the club soda or skimp on the mint. These mojitos are quick to put together and sure to please a crowd. - mariaraynal

What You'll Need
Ingredients
  • 2 cups watermelon, in chunks
  • 1/4 cup simple syrup
  • 1/4 cup fresh lime juice
  • 4 ounces light rum
  • ice
  • club soda
  • 10 good-sized sprigs fresh mint
Directions
  1. In a blender, whiz together the watermelon, syrup, lime juice and rum.
  2. Muddle 4 sprigs of mint in the bottom of each of two glasses. Add ice, and divide contents of blender between glasses.
  3. Finish filling glasses with club soda, and garnish with a sprig of fresh mint. Make another blender-full before you drink these, because you'll want another.

I'm a business professional who learned to cook early on, and have expanded my tastes and my skills as I've traveled and been exposed to new cuisines and new dishes. I love fresh vegetables, any kind of protein on the grill, and breakfasts that involve fried eggs with runny yolks. My recipes tend toward the simple and the Southern, with bits of Asia or the Mediterranean or Mexico thrown in here and there. And a peanut butter and jelly sandwich on a float in the lake, as pictured, is a pretty fine lunch!

A coworker made this for a BBQ we had yesterday. It was fantastic! I'm not sure if she changed any of the ingredients, but told me I could find the recipe here. This is an awesome way to use up watermelon that isn't going to get eaten.

Tested a delicious cocktail for an EP and have all this rum, club soda lying around, plus agave nectar, a new ingredient for me - I'm going to sub the agave stuff for simple syrup and try out your recipe - watermelons coming into San Diego soon...

We made these yesterday, and they were great! The only thing we changed was we used a drizzle of honey instead of the simple syrup, oh and by the second batch (!!) we were lazy so we blended the mint right in. Delicious poolside beverage! Now my mint plant need a break, so we will lay off at least until next weekend :-)

I could use one of these right now! I love watermelon, though I don't think we will be getting any good specimens in Boston for a couple more months.
