Serves 4-6

  1. Combine watermelon, diced onion, jalapeño, mint and feta in a large mixing bowl.

  2. In a smaller bowl, make the vinaigrette. Whisk blood orange juice, balsamic vinegar and olive oil together. Season with a pinch of salt and pepper, and add the garlic. Stir to combine, and pour onto the salad.

  3. Toss to combine. Plate and garnish with fresh mint and a blood orange slice. Enjoy!

I love watermelon and feta salad, and the use of jalapeno and blood orange makes it even better!
