Grilled Salmon Tacos

What You'll Need
Ingredients
  • 1/2 pound salmon
  • 1 pint cherry tomatoes
  • 2 jalapeños sliced
  • 1/4 cup red cabbage shredded
  • 1 avocado thinly sliced
  • 1 cup tomatillo salsa
  • 3 limes cut into wedges
Directions
  1. Preheat oven to 250 degrees. Cut tomatoes in half, place on a skillet and sprinkle with salt. Place in oven and let cook for 1 hour. Season salmon with salt and pepper and grill for 4 minutes each side. Top with dried tomatoes, peppers, cabbage, and avocados. Drizzle with tomatillo salsa and lime. Enjoy! Serves 4
