Tomato, Nectarine & Mozzarella Salad

I started making this salad a few years ago when we moved up to Cold Spring. I had bought some stunning tomatoes and nectarines and I thought they would probably be just as delicious together as they were on their own. I hope anyone who tries this thinks I was right. —sweet enough

What You'll Need
Ingredients
  • 3-4 tomatoes
  • 2-3 nectarines
  • 1 ball fresh mozzarella
  • 3/4 cup fresh basil leaves
  • extra virgin olive oil (enough to drizzle over the salad)
  • salt and pepper
  • 2 - 3 tablespoons balsamic vinegar reduced to a syrup (I add a bit of honey before I reduce it)
Directions
  1. Slice the tomatoes, nectarines, and mozzarella in wedges of approximately the same size and arrange on a platter with the basil leaves. Drizzle the olive oil over the top and sprinkle salt and pepper to taste. Drizzle the reduced balsamic around the edge of the platter and over the top.

Devoured by all. This is a keeper. My only substitution was the balsamic. I used my Trader Joe's balsamic with fig dressing. Both quick & easy. Very refreshing & looks beautiful on a platter with any spring mixture of lettuce or not. Heirloom tomatoes and semi ripe nectarines!
I drizzled the dressing over the top and accidentally forgot the EVOO. Refreshing

I had a salad like this, made with burrata instead of mozzarella, years ago and have been making it ever since. The nectarine-tomato combination is simply delicious!

Tomatoes...mozzarella...basil... So basically this is a Caprese Salad with nectarines added. Interesting.
