Combine mashed potatoes, egg, flour, milk,salt and pepper; stir to mix well until smooth.

I am going to make these pancakes tonight to go with my beef and roasted vegetable stew. I will add the picture to my recipe.
I made your pancake and it is wonderful...a great companion to the stew. I made a creme fraiche/horseradish sauce for the pancake and it really worked. I won't post a picture unless it is alright with you.
