Serves 4-6 cakes

  1. Combine mashed potatoes, egg, flour, milk,salt and pepper; stir to mix well until smooth.

  2. Heat butter over medium heat in a non-stick skillet and spoon ¼ cup of batter into skillet, pressing flat to make a circle.

  3. Cook until golden crisp, about 3 to 5 minutes per side.

  4. Drain on paper towel and serve with sour cream and applesauce.

I am going to make these pancakes tonight to go with my beef and roasted vegetable stew. I will add the picture to my recipe.

I made your pancake and it is wonderful...a great companion to the stew. I made a creme fraiche/horseradish sauce for the pancake and it really worked. I won't post a picture unless it is alright with you.
