Serves 8

  1. While potatos are still warm, but cool enough to handle, peel and pull out any tough fibers. Mash with butter and honey or brown sugar. Stir in beaten eggs and vanilla. Spread in a 9 x 13 casserole dish.

  2. Combine all topping ingredients. Crumble on top of sweet potatos.

  3. Can hold in refrigerator for up to 24 hours at this point. When ready to cook, allow to warm at room temperature for 30 minutes, and bake at 350 degrees for 45 minutes, or until topping is browned and bubbling.
