Makes 9"x13" pan to serve 6-8

Savory version with spinach and onions:

8 ounces medium or large flat egg noodles Ask a question about this ingredient

2 onions, sliced thin and sauteed in a little olive oil Ask a question about this ingredient

9 ounces package frozen chopped spinach, thawed with moisture squeezed out as much as possible Ask a question about this ingredient

5 tablespoons butter, softened Ask a question about this ingredient

16 ounces small curd cottage cheese (low fat is fine) Ask a question about this ingredient

1 cup sour cream (low fat is fine) Ask a question about this ingredient

a few pinches basil, fresh or dried Ask a question about this ingredient

salt and pepper to taste Ask a question about this ingredient

3 eggs, lightly beaten Ask a question about this ingredient

2 cups milk (low fat is fine) Ask a question about this ingredient

1/4-1/2 cup shreded parmesan cheese Ask a question about this ingredient

  1. Cook the noodles in boiling salted water, al dente. Drain well

  2. Put noodles in a big bowl and mix in softened butter until it's all melted.

  3. For the sweet version, mix the sliced apples and (optional) raisins into the hot buttered noodles.

  4. For the savory version, mix the sauteed onions and chopped spinach into the hot buttered noodles. (You may need to de-clump the spinach.)

  5. In a separate bowl, mix together the cottage cheese, sour cream and -- for the sweet version, the cinnamon and nutmeg; -- for the savory version, the basil, salt and pepper.

  6. Add the cottage cheese mixture to the buttered noodle mixture, and put the whole thing in a buttered 13"x9" pan.

  7. Use one of your bowls to beat the eggs and milk together. For the sweet version, add the sugar to the eggs and milk.

  8. Pour the egg/milk mixture over the noodles. For the sweet version, sprinkle a little cinnamon and sugar over the top. For the savory version, sprinkle the parmesan cheese over the top.

  9. Bake in a preheated, 350 degree oven for about an hour, until firm. Serve and enjoy!

Lovely, both of these!! I'd probably cross over and add just a tiny pinch of nutmeg to the savory, because I love the way it tastes with spinach and cheese. The apple version looks divine! Thank you for posting this.
