1 can (16 oz?) whole tomatoes, drained and chopped Ask a question about this ingredient
1/2 teaspoon dried oregano Ask a question about this ingredient
1/2 cup dittalini Ask a question about this ingredient
2 tablespoons fresh parsley, minced Ask a question about this ingredient
In a heavy saucepan cook bacon over moderate heat, stirring until crisp. Add onion and garlic, stirring until onion is soft and transparent. Add celery. Add broth and simmer, covered, for 5 minutes.
Ask a question about this stepIn a bowl mash 1/3 of the beans, then stir them into the onion mixture along with the remaining whole beans, tomatoes, and oregano. Simmer the soup, covered for 15 minutes, or until pasta is al dente. Then remove from heat and let stand, still covered, for 5 minutes.

Made this for a party the other day -- very well received.
Love this - it's light but hearty at the same time. I doubled it for a family of five (three kids) and it is a great winter night meal with a crispy garlic bread.

Served this today for lunch. I used oven-roasted tomatoes, and swirled in some spinach at the last minute. Fantastic.
So, so, so yummy. Changed it just a lil bit so i could get this family eating more veggies. Used uncured beef bacon, added carrots, zucchini, and spinach. and then served it over toasted bread rubbed with garlic.

This soup is delicious! My husband gave it a great review, despite not being big into beans or soups. I noticed that the recipe doesn't mention when the pasta goes in, and I assumed it was after the 1st sentence in step #2. I forgot to add oregano and didn't have fresh parsley on hand, but didn't miss either herb. Next time I'll double the recipe so I have more leftovers!
What?! You mean not everyone can read my brain and know exactly what it is I MEANT to say?! Yes, the pasta was supposed to go in right after mashing the beans and adding tomatoes. Good thing you are all smart cookies!
Outstandingly good and easy too. I used orzo and ended up adding a total of a quart of chicken broth to make it more soupy. Also dropped in a bay leaf and a big hit of black pepper. Great deep flavor and good color. I'll do this again and often.
Made this last night since it was a freezing night here in Colorado (-32 with wind chill). It was delicious and perfect and a loaf of crusty buttered bread.
They're predicting a good ol' North Texas ice storm this week. This is definitely on our shopping list this afternoon!!!
Doubled this for a family meal, and it turned out really great. Be sure to drain off some of the bacon fat, or things will get a little greasy.
Love this soup. So easy to make. Very tasty. And even better the second night.
I made this last night - it was great. Only problem (which I knew would happen, but forgot of course) is that the pasta soaked up most of the broth so I ended up with something akin to a stew. Still delicious though!

Throw in the uncooked pasta right after you've done all your bean mashing and whatnot and have given it stir. Easy peasy.
