Serves one

  1. Saute the chicken breast and slice into thin pieces

  2. Slice the avocado

  3. Peel and julienne the jicama into matchsticks

  4. Make the salsa: finely chop the green onions, tomatoes and cilantro and mix together

  5. Fry the corn tortilla in a little oil. Pat off the excess oil with a paper towell.

  6. ASSEMBLE: In the bottom of a large soup bowl place the fried tortilla.

  7. On top of the tortilla, put the chopped lettuce.

  8. Next , the sliced chicken.

  9. Next, the sliced avocado.

  10. Next, the salsa.

  12. HEAT the chicken stock, add the cumin and red pepper flakes and salt to taste.

  13. Pour the chicken stock into the soup bowl.

  14. Garnish with a dollop of sour creme and sprinkle with chopped cilantro.
