Expand1 big handful of high quality dried spaghetti or bucatini Ask a question about this ingredient

2 big spoonfuls of mascarpone (or Creme fraiche if you are Merrill) Ask a question about this ingredient
Fresh Ground Black Pepper Ask a question about this ingredient
maldon or fleur du sel salt Ask a question about this ingredient
Pecorino cheese grated Ask a question about this ingredient
chopped chives or Italian parsley or both Ask a question about this ingredient
Bring pot of well salted water to a roiling boil.

Ask a question about this stepDrain pasta & return to pot, add back in pasta water.

Ask a question about this stepDollop in mascarpone or creme fraiche, swirl that about as well, till it melts and the water and cream absorb back in to the pasta.
