Serves 1 cake

  1. Mix the diced apples with eggs. Then add sugar, cinnamon, oil, and nuts. I have used both oil and I have used butter...both work.

  2. Sift flour, soda, salt and mix into wet ingredients.

  3. Pour into a 9 x 12 loaf pan or tube pan which insures that the middle is evenly cooked and bake at 350 degrees for about an hour. Check to see if the center is cooked with a knife, if you don't use a tube pan.

I saved this recipe for Thanksgiving.

I substituted one cup of flour with whole wheat flour, and cut the sugar by a third. It still turned out really great, but because of the lack of extra sugar, it wasn't too sweet. I added a sugar/vanilla/milk glaze on top and it made it even more moist and added the right sweetness to it.

Now I can't stop eating it. This recipe forced me to learn how to peel apples.
