Preheat oven to 425 degrees.
Ask a question about this stepIn a roasting pan, add your chopped sweet potatoes and chunks of onions. Drizzle a little olive oil and sprinkle a pinch or two of salt over the veggies and roast for about 20 minutes or until the vegetables are tender.
