    I love salads like this one in the winter. Feel free to substitute a blood orange or pink grapefruit for the Cara Cara orange, if you like.

Makes 1 salad

Salad:

fresh salad greens- enough to cover your plate (I used baby winter lettuces from my garden) Ask a question about this ingredient

1 Cara Cara orange, peel and all pith removed with a sharp knife, and sliced cross-wise Ask a question about this ingredient

1/2 medium Chiogga beet, peeled and sliced paper thin on a mandoline Ask a question about this ingredient

small handful of minced cilantro (or substitute parsley) Ask a question about this ingredient

crumbled goat cheese (or substitute feta) Ask a question about this ingredient

generous pinch of crushed red pepper- optional Ask a question about this ingredient

  1. Mix dressing in a small bowl and set aside while you make the salad.

  2. Make the salad by layering the greens, then the orange slices, then the beet slices, then the minced cilantro, then the goat cheese. Sprinkle on the red pepper flakes, if using.

  3. Spoon the dressing evenly over the top of the salad and dig in immediately.
