Sagegreen's Notes: Looking for a new flavor this recipe puts an earthy, savory spin into a traditional buttermilk drink. For a vegan option you can sub almond milk with a splash of cider vinegar for the buttermilk...

Serves 1-2

  1. In a heavy heated pan like a cast iron skillet, toast the walnut pieces for about 2 minutes, just short of smoking. Pan fry the sage leaves for about 1 minute. With the bottom of a smaller pan, or other heavy instrument, crush the walnuts. Shred the sage leaves. Add these to a blender.

  2. Add the avocado, buttermilk, and chestnut honey. If you like a chilled drink include a few crushed ice cubes. Process until smooth. Pour into one or two glasses. This could be part of a New Year's resolution you could keep.

I made this with almond milk, maple syrup, and added Uncle Sam's cereal, and it was really refreshing! I used ice cubs. Thanks, Sagegreen!

I made this this morning, used soy milk and non fat greek yogurt (I didn't have buttermilk or almond milk) also didn't have chestnut honey so used the honey I had on hand, no ice cubes (too cold out) It was delicious!! I was gifted a huge amount of walnuts for Christmas so will be making this several times a week. I also added a tablespoon of Uncle Sam's cereal with flax seed. I love this, I may try a banana also!

Thanks, aargersi. I just made the almond milk with cider vinegar version, too. This makes almost a whole breakfast. It is full of surprise flavor.

Somehow the 1 cup of buttermilk and 1 1/2 tablespoons of chestnut honey were not published with this recipe. When I tried to edit, I received an bad gateway error, then did not see the edit button....will fix later when I am able, but those are the amounts of the missing ingredients for now.
