4 pounds tomatoes, stemmed and medium chopped Ask a question about this ingredient

1 large lime, cut into very thin slices and then cut into confetti sized pieces Ask a question about this ingredient
1/2 cup apple cider vinegar Ask a question about this ingredient
3 tablespoons fresh lime juice Ask a question about this ingredient

1/2 teaspoon red pepper flakes Ask a question about this ingredient
1/4 teaspoon cinnamon(ground) Ask a question about this ingredient
1/8 teaspoon cloves(ground) Ask a question about this ingredient
Put all the ingredients into a large pot and bring to a rolling boil for 2 minutes. Then, reduce to a simmer and cook until the mixture thickens to a good jam consistency. This can take a few hours,or more, but be patient. Just stir every once in a while to make sure nothing is sticking to the bottom of the pot.

Ask a question about this stepI love to make tomato jam, and how funny - I was just at the farmer's market to see if there were any last tomatoes I could make some jam from. Sadly, none that I wanted. I've never put lime in mine, and love your idea, so next year this is definitely on the list to make!! It really looks like a great recipe. Separately, I've gotta figure out why my lime tree hasn't yielded any fruit for 2 years in a row now...sigh.
I am so jealous that my fresh tomato supply is gone. I might try this with store-bought just because it sounds so good. I thought I did my last canning yesterday, but apparently not....
I thought I was done canning now too - until this popped up on my screen. I don't grow limes but am flooded with Meyer lemons. Will try pronto. Wish I had some of your snazzy Italian glass jars...
I think subbing Meyer lemons would work great. Would be a little sweeter, but it would be a great flavor. Don't forget the red pepper flakes...the small amount add to the flavor and won't be too spicy for Larry.
Sounds DIVINE!! where was this recipe when & had a bushel of tomatoes at home & was going crazy trying to use em up!! I HAVE to try this .. no excuses, I have all the ingredients sitting in the kitchen!
