The Salad:

1 small head of arugula Ask a question about this ingredient

1/4 thinly slice Vidalia onion Ask a question about this ingredient

1/2 cup pistachios - shelled Ask a question about this ingredient

3/4 cups Feta cheese - crumbled Ask a question about this ingredient

2 firm peaches - sliced and grilled Ask a question about this ingredient

  1. Grill the peaches on a moderate grill for about 2 minutes on each side (as soon as you have nice grill marks) flip them.

  3. Make the dressing - whisk the oil into the vinegar then taste and season.
