Serves 4 to 6

  1. Clean and chop kale and set aside

  2. Clean and slice leeks

  3. Peel and cube potatoes

  4. Put potatoes and leeks in a large pot with enough water to cover. Boil until about 2/3 of the way tender.

  5. Add the kale and continue cooking until all the vegetables are fork tender.

  6. Drain and return to the pan.

  7. Add horseradish. Season with salt and pepper to your taste.

  8. Add butter and mash as you would mashed potatoes. You will want to use a potato masher not your hand mixer for this step. Add milk to your desired consistancy.
