Expand6 Good Sized Potatoes Ask a question about this ingredient

2 or 3 Leeks (depending on their size) white and light green parts only Ask a question about this ingredient
3 generous tablespoons horseradish Ask a question about this ingredient
1/3 cup butter Ask a question about this ingredient
salt and pepper to taste Ask a question about this ingredient
Clean and chop kale and set aside
Ask a question about this stepClean and slice leeks
Ask a question about this stepPeel and cube potatoes
Ask a question about this stepPut potatoes and leeks in a large pot with enough water to cover. Boil until about 2/3 of the way tender.
Ask a question about this stepAdd the kale and continue cooking until all the vegetables are fork tender.
Ask a question about this stepDrain and return to the pan.
Ask a question about this stepAdd horseradish. Season with salt and pepper to your taste.
Ask a question about this stepAdd butter and mash as you would mashed potatoes. You will want to use a potato masher not your hand mixer for this step. Add milk to your desired consistancy.
