Preheat the oven to 375 degrees and place potatoes on a baking sheet. Let potatoes roast for about 20-30 minutes until very soft.

I have never really liked Shepherd's pie, but this recipe sounds delicious. Sweet potatoes, chili powder, and bacon? This recipe may just convert me.
