Serves 4

  1. Chop the garlic finely.

  2. Put the chillies, rice vinegar, salt, sugar and garlic in a small sauce pan over low heat until the sugar dissolves.

  3. Bring to the boil, then cook for about 5 minutes or until the mixture thickens to a liquidy syrup consistency.

  4. Remove from the heat and allow to cool

  5. Cut the Halloumi into strips

  6. Just before serving, heat the oil in a non stick pan on a high heat.

  7. Fry the strips of Halloumi in the pan until they are golden on both sides (this is a very quick process).

  8. Serve the warm cheese with the Sweet Chili Sauce on the side.
