Expand½ bunch cilantro Ask a question about this ingredient

3-4 cloves garlic Ask a question about this ingredient
¼-½ cups olive oil Ask a question about this ingredient
Juice of ½ lemon Ask a question about this ingredient
¼ cups grated Parmesan Ask a question about this ingredient
Salt and freshly ground pepper Ask a question about this ingredient
Combine the cilantro, parsley, scallions, garlic, and ¼ cup olive oil in a food processor. Blend until a paste forms.
Ask a question about this stepAdd the lemon juice and Parmesan and season with salt and pepper. Taste and add more garlic, lemon juice, olive oil, Parmesan, salt, and/or pepper as needed. Add a dash of the pasta water and blend until smooth. To serve, toss with pasta (this is enough for up to 1 pound pasta). Enjoy at any temperature.
