Makes about 24 large cookies

  1. Preheat the oven to 375F. Prepare a baking sheet with a silicone liner or line with foil and butter pan.

  2. In a bowl, thoroughly combine the flour, salt, and baking soda. In a large bowl, whisk together the olive oil, sugar, eggs, banana, eggs, vanilla, and coconut until fully incorporated.

  3. Gradually add the flour mixture into the olive oil mixture and mix until all ingredients mixed in, scraping down sides. Pour in chocolate and mix. Let sit for about 5-10 minutes to firm up.

  4. Drop by the tablespoon onto the prepared baking sheet and bake for about 10-12 minutes. Transfer to a cooling rack. Enjoy.
