Serves 4

  1. Combine beans, corn, seasonings, lime juice and salad oil. Set aside.

  2. Cook fish sticks according to package directions or your preference. Err on the side of extra crunchy coating.

  3. Blend avocado with lime juice, salt and cayenne.

  4. Assemble tacos. Spread guacamole in taco shell; top with fish stick, spoon black bean and corn salsa on top.

  5. Eat immediately, with prodigious quanties of Negro Modela Especial beer!

Fish taco's are wonderful and the addition of your corn and black bean salsa is taking it to another level.

I couldn't believe how easy and good they were with fish sticks. And the black bean and corn salsa...well, I'll eat that with most anything except cereal for breakfast, and if the cereal is rice, then that's doable, too!

I agree love bean and corn salad. I eat with crab cakes all the time now I have to try with a fish taco, Delish!
