Serves 8

Tart Crust:

3 cups all purpose flour Ask a question about this ingredient

1 1/2 cups butter, cold, cut into small pieces Ask a question about this ingredient

1 large egg Ask a question about this ingredient

6 tablespoons ice water Ask a question about this ingredient

1 tablespoon white vinegar Ask a question about this ingredient

4 slices smoked bacon Ask a question about this ingredient

  1. Cook the bacon until very crispy , and then crumble it into tiny pieces.

  2. Mix together the flour, butter, egg, water, vinegar, and bacon bits. Do not worry about mixing the butter into the mix too much. (I use a heavy fork, but you can use a food processor).

  3. Since this recipe makes more that you need, save the rest for another tart. You will need about 2/3 of this recipe.

  4. Roll the dough to fit into an eleven inch tart pan with a removable bottom. Press it evenly and up the sides of the tart pan.

  5. Blind bake the crust at 350 degrees for about 15 minutes.

  6. For the Blue Cheese Filling: Mix together the milk,cream, egg ,egg yolks, blue cheese and pepper and pour into the crust.

  7. Bake about 15 to 20 minutes at 350 degrees until set.

Okay, the wheels are turning thinking of something alongside which to serve this. I can taste the bacon and bleu cheese just from your description.
