ABOUT THIS COOK:

Keen to improve the classic dishes of our heritage and discover previously exotic vittles. Prefers a vegetable rich, low fat diet along the lines of Nouvelle Cuisine. Favored/favorite traditions include Mediterranean (Turkish, Lebanese), Cucina Povera, Hispanic (Peruvian, Cuban), Indian, and Korean. Food idols: René Redzepi, the Adrià brothers, Fergus Henderson, Jacques Pepin.

  • What is the strangest food you have ever eaten?
    Paan supari, a mixture of sugar, shredded areca nut, fennel, etc. in betel nut leaves, meant as a palate cleanser with a royal, spiritual and religious history. Now banned in Dubai to boot.

  • What do you cook when home alone?
    Everything?
